Tuna Tartare
Tuna Tartare
ingredients:
Large piece of fresh yellowfin tuna (just over a pound)
2 limes, zested
1/2 cup olive oil
1 tsp wasabi powder
1 tbsp soy
Drop of sesame oil
1 tbsp Sriracha sauce
1 tsp black pepper
2 tbsp cup scallions, minced thinly
Kosher salt, to taste
2 avocados
1/4 cup lime juice
2 lotus roots (see recipe here)
Peanut oil
For garnish:
Toasted sesame seeds, black & white
Lime caviar
Reduced balsamic glaze
Preparation:
Cut the tuna into 1/4-inch dice and place in bowl. In a separate bowl, combine the olive oil, lime zest, wasabi, soy sauce, Sriracha, salt, and pepper. Pour over the tuna, add the scallions, and mix well. Cut the avocados in half, remove the seed, and peel. Cut the avocados into 1/4-inch dice, add lime juice and toss. Add the toasted sesame seeds, if using, and season to taste. Can be prepared a few hours in advance. Serve with lotus root chips, garnish with balsamic glaze, sesame seeds, and lime caviar.
