Kettle Corn Popcorn
Kettle Corn Popcorn
¼ cup canola oil
½ cup popcorn kernels
¼ cup white sugar
Fine salt to taste
Optional: semisweet chocolate, melted on a double boiler
Place oil on high in heavy bottom pot , when oil becomes hot (veins and patterns begin to form in the oil), add the kernels and the sugar. When kernels begin to pop, turn heat down to medium, remove the pot and shake for 5 seconds, return to heat for 5 seconds, remove and shake for 5 seconds, and continue the pattern of on the stove for 5 seconds, off for 5 seconds, until the popping seems to die down. Shaking the pot while it is off the heat will keep the sugar from burning and ensure un popped kernels go to the bottom of the pot.
Remove from the pot immediately, placing popcorn on a baking sheet. Sprinkle with fine salt and drizzle melted chocolate over popcorn. Let sit until chocolate is set (approx 1.5 hours)
