Banana Bread
Banana Bread Recipe
butter for greasing pan
2 ½ cups flour
2 teaspoons baking soda
¼ teaspoon kosher salt
1 3/4 cups organic sugar
1 cup butter, softened
4 eggs
½ teaspoon vanilla
3 cups of very ripe mashed bananas
3/4 cup of chocolate chips
Preheat the oven to 350ºF. Grease a bundt pan or 2 standard-sized loaf pans. Set aside.
Whisk together flour, baking soda and salt. In a mixing bowl, cream the sugar and butter until light and fluffy (really wait it out long enough though). Add eggs one at a time, beating well after each addition. Add the vanilla. Add the mashed banana (make sure it is mashed well, almost into a pulp), and beat to combine. Add the dry ingredients and mix until the flour is incorporated — do not overmix. Gently fold in chocolate chips. The batter itself will be very light, so chocolate chips may sink down to the bottom of the cake. If you coat them lightly in flour you can prevent that from happening.
Pour batter into prepared pans and place in the oven. Bake for 45 to 60 minutes. Cake should be brown and should start to leave the sides of the pan.
Let cool on rack for 15 minutes before removing from the pan.
